(Sorta) Homemade Chicken and Dumplings



Thank you Bobbie for the delish original recipe, I've changed it around a bit over the years for our family, and its more of a soup than the original which was an awesome think kind of stew. ill have to get her permission and post it later....


Ingrediants

2 boxes of Chicken broth
fresh green beans cut into small pieces
fresh carrots peeled and cut into small pieces
2-3 large potatoes peeled and cut to bite size pieces
1/2 onion finely chopped
2 containers of refrigerated biscuits (use butter biscuits for a different flavor)
1 lb cooked shredded chicken (I pre-boil mine and shred it beforehand)

Heat chicken broth in large pot over med heat. Add chicken. Add onion, potatoes, carrots, and grean beans. Add salt and pepper as desired. Open refrigerated biscuits and separate. Cut each into small pieces and add to pot. Biscuits will puff up, but that's ok, just stir occasionally and let them cook. Allow to remain on med heat for about 45 min to an hour until biscuits are done and no longer floating. Enjoy!!!

Note: This recipe doesnt really work in a slow cooker...the dumplings dont cook correctly.
