OH WOW these were delicious. I only really needed one cupcake for a photo shoot that my son was doing for his first birthday. looked all over the internet for small batch recipes...ehhh ill just whip up something myself. To my great surprise THEY ROCK! these cupcakes stand alone and dont really need any icing....not that i would ever let a cupcake go un-iced....but anyhow....The recipe makes just enough for 6 flat-topped cupcakes.
Ingredients :
2/3 c. flour
1/2 tsp. baking powder
1/8 tsp. salt
4 tbsp. milk
1 1/2 tsp. vanilla extract
5 tbsp. butter, softened
1/3 c. sugar
1 egg
Honestly i just mixed it all together except the egg. Beat it really well by hand and then mixed in the egg last. Put into paper lined cups and bake in a preheated oven at 350 degrees and voila! Decorate as desired!
